Recipe | Frozen Chocolate Mousse Cake

I was given this recipe years ago.  It’s such an easy no cook dessert that everyone loves. And you can make it a few weeks in advance if you wish. 

 Ingredients

1  packet chocolate cream biscuits (such as Oreos)

375g quality milk chocolate

1 cup thickened cream

1 cup whipped cream

1 springform 8” cake tin

Cling film

Freezer

Method:

Using a food processor finely process 1/2 packet of the chocolate biscuits into crumbs & line the bottom of a springform tin with the mixture pushing down firmly.

 Melt the chocolate with 1 cup of thick cream and pour 1/3 into the bottom of the springform pan.

 Mix the 1 cup of whipped cream into the remaining chocolate mixture.

 Roughly chop the remaining biscuits. 

 Sprinkle a thin layer of chopped biscuits over chocolate layer in the springform pan.  Follow with another layer of chocolate mixture and then another layer of biscuits then repeat finishing  with the chocolate cream mixture.

 Wrap tin well in cling film and freeze overnight.

 To serve, remove from freezer 10 minutes before needed. Top with fresh berries & a little grated chocolate and slice.
